Use Broadway Baby Supremo 4 Ply or Broadway Merino DK, as selected. The builder supplies the flat-knitted versions.

The printed 4 Ply instructions list Baby, Child and Small Adult. A Large Adult row appears in the materials table without a corresponding fourth instruction size, so that option is awaiting clarification.
Needles and tension
4 Ply: 3mm straight needles; 26 stitches over 10cm in stocking stitch. DK: 4mm straight needles; 20 stitches over 10cm in stocking stitch. Row tension is not specified.
The leaflet also discusses knitting in the round. This builder supplies straight needles because the 4 Ply circular-needle wording is inconsistent.
Finishing
Choose your edge and top finish from the leaflet, then seam the hat and weave in ends. A yarn sewing needle and scissors are useful.
